Rum and Coke Cupcakes
The Cupcake
1 box butter recipe cake mix (or yellow)
1 3/4 oz. vanilla instant pudding
4 eggs
1/2 c. milk
1/2c. vegetable oil
1 c. dark rum
The Rum Butter Glaze
1/2 c. butter
1 c. sugar
1/2 c. rum
The Frosting
1/4 c. butter
4c. pwd sugar
2 tsp cola extract
rum (to taste and consistancy)
Bake
Preheat oven to 325.
Combine all ingredients and beat for 2 minutes.
Bake for 15-20 minutes.
Glaze
Melt butter, stir in 1/4 c. rum and sugar.
Boil for 5 minutes, remove from heat
Stir in 1/4 c. rum
I apply to cupcakes while warm with a basting brush.
Let sit and apply again... until mix is gone.
(The longer they sit, the more
the alcohol will seep throughout the cupcake)
Frost
Beat butter until fluffy, add cola extract, pwd sugar and rum.
again, to taste and consistancy.
I don't measure exactly when I make the frosting...
I garnish with a maraschino cherry.
Irish Carbomb Cupcakes
The Cupcake
1 c. Guinness
1 stick plus 1 tbls butter
3/4 c. unsweetened cocoa powder
2 c. flour
2 c. dark brown sugar
2 1/2 tsp baking soda
1tbs. vanilla extract
2 eggs
3/4 c. sour cream
The Frosting
1 stick of butter, room temperature
3 to 4 c. confections sugar
Baileys and Jameson to taste (and consistancy)
Bake
Preheat oven to 350°F.
Bring 1 cup Guinness and 1 cup butter to simmer in heavy large saucepan over medium heat.
Add cocoa powder and whisk until mixture is smooth.
Whisk flour, sugar, baking soda, and 3/4 teaspoon salt in large bowl to blend.
Beat eggs and sour cream in another large bowl to blend.
Add Guinness-chocolate mixture to egg mixture and beat just to combine.
Add flour mixture and beat briefly on slow speed.
Fold batter until completely combined.
Divide batter among cupcake liners.
Bake cup cakes 15-20 minutes.
Cool cupcakes on a rack completely.
Frost
Whip the butter in the bowl, add powdered sugar
Add Bailey's and Jameson to taste,
and to consistency you want, for me, it is
a fine line between stiff frosting that will hold shape
and 90 proof frosting :)
